I named my blog site after my nick name for my home. West-End-Acres is a little, 1 ¼ acre patch of heaven, located in what seems like the middle of nowhere. I was certain that It would be the end of me after the first week.

The sky is always putting on a show, a 360 degree view of the desert plane, which is surrounded mountain views. What a way to go! I won’t mind my end much, if I can spend my time here!

Gluten Free Bread

1/3 c sugar or honey (can add equal amount of "splenda" for sugar free)
½ tsp salt (1/4 to 1/3 depending on your taste)
¼ c warm water
½ tbs yeast
1 c milk
1 stick butter softened
1 egg
1 tsp xantham gum, or ¼ c of dissolved knox gelatin. (or any other unflavored brand).
5-7 c GF flour

Proof yeast in warm, tepid water
In a large mixing bowl, add sugar (or honey with the wet ingredients), salt, and about 2 ½ cups of GF flour, (sift dry ingredients and double sift flour for a lighter dough).
Add butter, milk, proofed yeast, egg and gelatin.
Mix together until well blended.
Add remaining flour until the dough is about the consistency of a heavy batter. (like thick pancake batter).
Pour into well greased bread pans, fill only to about 1/3 way.
Allow to rise double. (Do not beat down – place in oven when raised)
Bake in a 350 degree oven for about 45 minutes to 1 hour. Bread is done when it’s golden brown, and when tapped sounds very hollow. Allow to cool completely before cutting and freeze sliced bread.
